Preheat slowly and stay below smoke

Add the correct volume of oil to a stable vessel with generous headroom. Heat gradually while watching the thermometer. Never leave oil unattended. If it begins smoking, turn off heat when safe and let it cool; smoke is not a flavor milestone.

Expect a drop when food enters

Once recovery begins, reduce the burner before the oil overshoots. Note the setting, batch weight, and recovery time for next round. That record is more useful than memorizing someone else's stove knob, which may run on a scale from “mild suggestion” to “sun.”

Separate pieces by size

Turn pieces as the recipe directs and maintain space around them. If breading darkens too quickly while the center remains under temperature, lower the oil range within the tested recipe, use smaller or more uniform pieces, or finish through a validated oven method. Check doneness outside the oil

Lift a representative large piece to a clean plate or rack, insert a clean food thermometer into the thickest edible part without touching bone, and verify at least 165°F (74°C).

Return an under-temperature piece carefully and recheck. Avoid contaminating cooked pieces with raw-contact tools or surfaces.

Let oil recover between batches

Remove loose crumbs when safe and practical because they continue browning. Wait until oil returns to the recipe's starting range before adding the next batch. Never top up with water and never use water to cool hot oil.
